Beef Hot dog the final W/Qview

We run out of hot dogs o boy (in my house no hot dogs = disaster)

got mince beef out the freezer  cure #1 spices

3 time through the grinder

and i Made few hot dogs and 2 new type of sausage i played with the spices and put in a collagen casing

this is the one in the collagen casing it will go to the smoker 160 2 hours 180 till IT 155  Apple wood

160  for 2 hours and then in to a hot bath of 180 till IT 155 and to an ice bath

How are these in Collagen casings?  I see everyone here seems to use hog casings on larger sizes sausage.


 This is a new one i will tell you tomorrow . it is 10:00 pm here it will be ready at 11:00

The hot dogs are great i think i will do it like this in the future

out of the smoker after 2 hours at 140 and light smoke . in to a bath of water at 165 to poach  till IT 155 and in a bath of ice water.

The one with the collagen was in the smoker 2 hours 140 and than 175 till IT 155 ice bath and to dry til this morning

It lost some feat you can see it on the side i don't know why

The Taste was good but not great need more heat (chili) but the new collagen is great easy to work with.

Man oh Man ahron I didn't know you were the hot dog king. Those dogs look fabulous ad I bet they taste good to. We love us some hotdog around this house to. You'll have to send me the recipe for yours. Please.
