Not sure where to post this subject, but Poultry seemed the logical choice.

Yesterday, I smoked a 13lb bird, and roasted one as well. With all the holiday choas, I only got 1 pic of the smoked yard bird.

Brined with 2cups K salt, 2cups Br. sugar, 1/4cup chopped garlic, 1/2cup bl. peppercorns, for 12 hours. 2 hours into smoke: (Side note, this bird was done in 3 hours)

Turned out great, RAVE REVIEWS.

Today, I volunteered to smoke 2 birds for my neighbors family gathering. Again, not alot of photos due to complete chaos. Same brine, same rub, almost the same cook time(3.5 hours and DONE for 2 13lbers).

So, after I realized that the neighbors birds where almost done, I threw some eggs on the smoker to check off another "To smoke" victim from the list.

2 hours at 235-240*, kissed with mesquite, I ended up with this:

Probably the best "Hard boiled/Smoked" egg I've ever had. I shared my pot of gold with the neighbors and they agreed. So for those who think you have to boil, then peal, then cold smoke eggs, It is NOT true.

Hope you enjoyed/will enjoy a hard smoked egg in your smoking adventures.

so did you just put raw eggs in the shell on the smoker?  gotta know.  I have done smoked eggs on a little cheif before but that won't get a high enough temp to cook the egg too.  Let me know how you did those, what temp etc.  I'd like to try it.
 
Bet those smoked eggs would go great in an egg salad!  Thanks for posting, oh and BTW  the birds look great.

The eggs went straight from the fridge to the smoker. Temp was held at 235-240* for 2 hours, turning the eggs after 1 hour.

I hate hard boiled eggs :) but this really intrigues(sp) me. Do you serve them as they are or do you cool them first? Do you use them for deviled eggs? Any insights will be appreciated

I lo0o0o0ove HB eggs. But, as to your question: I let them cool to room temp and had to shove one down my gullet. The smoke favor is very subtle so I would LOVE to try some in an egg salad sammich. On a salad, yes. I'm thinking about throwing the cast iron skillet on the smoker and doing some smoke/fried eggs for breakfast. I have definitely created a monster!!

I've been doing that since I saw a post on here about 2 yrs. ago. Yes, they are good and yes they make a killer salad or Deviled Eggs too.

Smoke the Potatoes and onion and you get a Phenominal Potato Salad.

Looks great! I sure wish I would have seen this before yesterday, I could have used the remaining heat/smoke to try the eggs. Thanks for sharing this!!!

The eggs look great. I love the color they get when they are smoked. I agree you don't need to boil them first you can just put them on raw. The only issue I have is they don't have quite enough smoke flavor that I want because as you said the smoke flavor is very subtle. Its still the best hard boiled egg you have ever eaten but I want to put them in an egg salad or potato salad and I want a very distinct smoked flavor so next time I am going to put them on raw like you said  and once they  are cooked peal them then cold smoke them or I might just boil them and peal then cold smoke them. I'm not sure which way yet. Either way I am hoping with the extra smokey flavor it will put the dish over the top. Oh I almost forgot. The main dish I want to try is smoked pickled eggs. I can't wait I might just have to do some this afternoon when I am cold smoking cheese. Great Thread. If you guys haven't tried smoking egg you really should give it a try.
 
The whole egg thing intrigues me. I need to put this on my to do list. The birds looked great and I am sure they tasted great as well.
