First time cooking a bird, I should have run a test run but NO, I have a bradley digital and I can not get the temps up, I have it set at 300 and after one hour the thing only got up to 242 so I wanted to go out hunting and I put the bird in at 6:30 am well at 8:30 2 hours later it is at 232deg.

I had the bird in a brine for a day and a half and eat time is at 1pm.

If at a certain time I am not up to a certain temp should I stuff it in the oven and if so how long do I need to give that ?

I put my drip pan in with a can of chicken broth in at 8:30 am and now my temps are at 210

Should I be concerned also about get it to a temp for safety reasons ?

Put the smoke to it for a few hours, and finish it off in the oven

This way you'll get crispy skin!

couple of questions for ya

Do you have another Therm to double check temp, and are you really cold this morning, and how big is the bird.

As for finishing in the oven, you can def do that and yes you need to get it up to temp up to 140 internal temp within the first 4 hrs.

I don't have a bradley so I can help troubleshoot any probs, but with a steady decline in temps you most def have a problem.

I'd say if you can't get it figured out in the next few min, ya probably better get it in the oven.

It is up to 216 now and yes I have dual temp readings,

It is 42deg outside

bird is 13.5lbs

  Like Todd said, smoke it for a couple hours and finish in the oven.

At 325º it takes about 20 mins per lb.
 
I took it out after 3 hrs the bird is at 133deg

I put it in the oven.

I left the smoker on to see what it would do and now the temps are climbing, why wouth it not get up to temps with the bird in it ? aven after 3hrs of being in there..
 
After one hr in the oven meat temps are at 158deg

It smells and looks great, nice and brown.. It will be done 1.5hrs early

I have 2 sets of maverick ET-732

after 1 hr 15mins the breast reads 165 deep thigh reads 180, I thought this was suppose to be the other way around ?

This is the correct temps for Breasts and Thighs...you are Golden...JJ
 
Thanks everyone, it was a good turkey day, my smoked turkey had better flavor then my brothers oven cooked.
