I was doing some practice with my comp ribs last night, they turned out so well
I thought I would share them with the gang.
Started with 2 racks of St. Louis style ribs
1 injected and 1 without injection.
I've heard that in the south the judges like it sweet and sticky,so here we go!
I made a sweet rub with lots of brown sugar
Smoked at 250º with apple, pecan and lump
Did the 3-2-1 method
Here they are just before foiling
this is what they look like after the foil and glazed with super sticky sauce
Nice and shiny!
This is the injected ribs
I preferred the injection but the little lady liked the non-injection ribs.
They both came out great and super sticky
DO NOT try this at home if you're diabetic, it is very sweet.
We'll see if the judges like it at the next contest.
