Trying a brisket recipe today

Got a 10 lb'r and trimmed all the fat and silver skin

Rubbed with McCormicks Beef Stew seasoning and CBP

Into the smoker at 8:30am @225º with lump and pecan, I'm out of apple chunks

Here she is at IT of 190º

It wont be long now!

When it's done I'll separate the flat and let rest, and make burnt ends with the point.

It's gonna be good!!!!

It's time for dinner but I wont budge from the 225º cook temp (I swore I would maintain)

Don't know how long I can stand smelling this beauty!

I notice a lot of people smoke things in pans, is this method better than just putting on the racks and cooking?

Your brisket looks great, but what about all that Bark people look for?

I have not done brisket for a long time and am curious about this.
