It has been a bit since I posted so here is what I have done lately and I am doing today.

Last week I did some wings, oysters, and salmon.

Wings were great.

Now the cream of the crop.  The Oysters...  We used a butter parmesan cheese mixture top and threw them in the smoker for about 3-5 minutes.  AWESOME!

I am doing a butt right now and I will post pictures later.  Once again the oysters were awesome.  If you are interested in the butter  cheese topping let me know and I will get you the recipe.  It is awesome!

The smokey oysters must have been fantastic! I've been thinking about giving that a try but had not thought about the butter and cheese.

They were awesome..  We used butter, cheese, chives, and Tony's creole seasoning.  Awesome...

Equal amounts of sharp cheese(parmesan and/or swiss) and butter and a little heavy cream. Add your choice of herbs.  We had chives and sprinkled the final product with Tony's Creole seasoning.  I really think adding some bacon chunks on top would be awesome too.  Make sure you foil underneath because the oyster juice that leaks out is fantastic.  If you can put a catch pan underneath to catch it all that would be good and then spoon the juice back on top before you eat. Just smoke for 3 minutes or so.  Until the mixture melts.
