Been lurking around the forums for awhile. Figured I would introduce myself. My name is Daniel. I am a college student in Virginia. 

I am an avid cook and baker, and have been looking to expand into smoking for quite some time. I checked out the 5 day ecourse and have been reading wikis and it looked very interesting to say the least. There is quite a bit of information to take in. I have also looked at many threads and have seen some great food that I cannot wait to try for myself.

I have been checking out a smoker for awhile and I finally scraped up enough money to buy one. I was looking for a smoker that didn't have to be stared at constantly due to my schedule of school and work. I have been looking at a MES40. A few questions I have would be are is it able, and more importantly safe, to set it up and head to class for 2 or 3 hours at a time? Also, how well do they work in the colder months?

I look forward to spending time here reading/posting and taking in all the knowledge I can. 
 
 Hey I got mine at Wally world ( in Richmond , off Forest hill ) its cheap, safe and easy set up  a Brinkman Electric and have been smoking some nice Q  where are ya in Virgina ?
 
Welcome to SMF glad you joined us. The MES is a great smoker and many of our members produce some great food in them. I don't own one but I'm sure the masses will be along to give you more info about them. Have fun and happy smoking

I have a MES 40 and love it. I use it all the time.

Leaving it for 2 to 3 hrs doesn't seem to be a problem at all for me.

I have an AMNPS to make the smoke and it works great.

First off welcome Daniel to SMF. You'll like this place for there are alot of folks here that would just love to help you with just about anything to do with smoking meat. You will find alot of good recipes and techniques here also. so with all that said:

 The MES 40 is perfect for what you want to do. Only thing is you will need to scrape up a little more cash and get the amnps.

 The MES 40 requires that you load chips around once an hour ,but w/ the amns or amnps you can get up to 10 hrs of smoke w/o reloading.

  I would do a couple of shorter smokes or smoke when you have a day off the first few times .Just so you can get used to how the MES functions before leaving it running.

I was looking at the AMNS and the AMNPS. I was having trouble figuring out why one would choose pellets over the dust.
