Time to start thinking about the holidays and I wanted to do a practice run on some turkey. I picked up a breast portion weighing just under 9 1/2 lbs.

Pulled back the skin and injected it with a mix of EVOO, red wine, garlic powder and onion powder. Rubbed the outside with the same mix.

Pulled the skin back over the bird and placed in the MES. Smoked with apple.

I probed each breast and pulled when one side was at 162 and the other was 164. Used a foil pan to catch drippings for gravy.

I don't care for the skin so I pulled it off and got to slicing. You can see some of the spices from the injection process.

I enjoyed it so much I picked up another one when I saw em at a good price at wally world. I'll probably smoke it tomorrow.

That turkey breast really looks good.

I have one of about 12lbs in the freezer and also a complete 12 lb turkey.

I still need one more whole turkey cause I have to do 3 of them for Thanksgiving.

Hey Chef Jimmy,

I smoked at 235 and I think it took between 3 1/2-4 hours but I didn't really time it. I'm doing another one today and I'll actually time it so I can have an idea for timing for holiday meals.

Just finished one that was 8.8 lbs compared to the 9.42 lb done in this thread. The one I just finished was smoked at 225 with mesquite. It went on at 3:15pm and at 7:38pm one side was at 161 and the other was 166 and I pulled it. I tested the thermometers prior to smoking and they were both the same.

I love this time of year.

Thanks Bro, The family wants a Tradional Turkey for TG but I got the ok to bang out a couple of smoked Breasts for Christmas if we head East to Jersey...JJ

Does that mean you get the green light to do some practice ones between now and then?
Jeez, I didn't think to ask...We usually try to avoid poultry in November so we can build up a jones for the big day...Good excuse for December though!...JJ

Yes. I took the left over injection mix and poured it on the turkey then mixed up some more and added to it. Covered it with the skin and into the smoke.
