I got this recipe from one of Nepas previous posts:

Here they are about 4 hours in.  I used my A-maze-N-pellet smoker with apple!

I smoked for 7 hours until the IT was 160* and then hung to bloom.

Here they are the next day!  The taste is FANTASTIC!  I think I may have found my favorite stick!  They still don't look quite as good as yours Nepas but getting closer!!!  Thanks for posting the recipe!!!

Those look great, the last I made I did with out casings, I like the casing on them. What casing did you use? I have been using cologen but they separate for some reason, I have tried different manufacturers.

So so these taste like Slim Jim's? I don't particularly like Slim Jim's so I am curious how these are. I know its not fair at all to compare these to store bought fatty Slim Jim's but I am curious if they taste pretty close? I am looking for a new recipe for making hot sticks this year. I am sick of buying premixed seasonings and I want to mix my own. Thanks for the info.
 
That is some nice lookin snack stix.

I like the slim jims but sometimes way to greasy for me.

Cholesterol count says I don't need the extra fat. lol

I think they taste pretty unique, the best stick I have ever had!!!
 
Those look great, the last I made I did with out casings, I like the casing on them. What casing did you use? I have been using cologen but they separate for some reason, I have tried different manufacturers.
I used the casing that came with one of the hi mountain kits.  The casings work perfect for sticks but I prefer the homemade seasonings.
 
Looks tasty! I need to invest in a grinder and a suasage stuffer! Guess I am gonna have to start saving my pennies. Slowly building my arsenal. Putting in my order for an AMNPS tonight! I'm so. :yahoo: happy!
