Hey folks, found this site last week and its such a relief to finally have a place to go for advice and suggestions on smoking meat.  Growing up, my dad had a few restaurants that all had large commercial smokers in them and all the meat was smoked.  I am 26 years old and about 6 months ago I bought one of his old smokers from the guy that bought it from him.  I rebuilt it, and put it on a trailer.  It is the oyler pit,http://www.jrmanufacturing.com/oyler.html, it holds a lot of meat and does amazing things with whatever i throw into it while there's a fire going.  Of course, the one I bought is before all of the electrically controlled elements were incorporated so I have a few more variabilities than the website shows.  Now I am trying to get good using what I have and find consistency in what I am doing to have a consistent product.  Anyways, before I keep rambling, very glad to have found this site and look forward to learning from all of the people here.  Thanks for having me.

That is one awesome cooker. I absolutely prefer to cook on a rottisserie.

It does something different to the meat as it passes through the different temperature zones in the cooker.

What ya gonna do with it, haul it down to SLO for Thursday Night Farmers Market?

What were the names of your father's restaurants, I might have eaten in them

Templeton..., small world huh, I used to have 10 acres out on Hord Valley Road, sold that and moved to Atascadero, is the Iron Horse still open, man they had some good food back in those days, ...as you can see I'm a long way from SLO county now (couldn't stand the fog).  LOL

Whatever you do enjoy your smoking experience and be sure and post lots of Q-view pics,

Wow, sure is a small world.  Havent quite decided what im going to do with it.  So many options... My dad had Woody's BBQ.  There were two in Santa Barbara and one in Fresno.  He has sold them since but one is still in business with a new owner.  I dont think the Iron Horse is still around.  And the fog, i know what you mean, the weather is just horrible here, haha.  I will post pics soon.  Take care.
