[h1]Chipotle-Plum BBQ Pork Ribs[/h1][h2]Ingredients[/h2]
  • 1 teaspoon instant coffee
  • 3/4 cup plum sauce
  • 1/2 cup freshly squeezed orange juice
  • 2 tablespoons minced chipotle in adobo with sauce
  • 2 tablespoons brown sugar
  • Salt and freshly ground black pepper
  • 2 1/2 pounds pork back ribs
Mix 1/4 cup hot water with the instant coffee and stir to dissolve. Once, dissolved, combine with the plum sauce, orange juice, chipotle sauce and brown sugar in a small saucepan over medium heat. Bring the sauce to a boil and reduce the heat. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper.

I used 1 rack of ribs.  Rubbed down with Brown sugar, Paprika, Chili powder, garlic powder( I eye-balled the stuff maybe ½ cup brown sugar, 1 teaspoon of the rest).  Then smoke  3-2-1 method.  I did not spray during the “2” part.   After I took it out of the foil, I began basting it with the sauce.   Then I used the extra sauce when I ate it.   I smoked with apple.

Smokey (our kitty) was laying on the desk, half on my arm.

I zoomed in on that Bearview of the Rib, and he ran away.

He thought he was gonna be attacked by a Giant Rib!!!

Nice work here. They look delicious. I'm still trying to perfect the "homemade"

french fry. For some reason, after 10 minutes or so on the plate, they get soggy

quite quickly.

I'll take a plate of those ribs please...James

James the key to Crispy Fries is...Russet aka Baking Potatoes cut 3/8" or less...Fry 5-10 minutes at 325*F...Spread them out on a Cookie sheet and rest while Oil heats to 375*F...Fry a Second time to the desired Color about another 5-10 Minutes... Aka Double Fry Method...Golden Brown and Crispy Delicious...JJ

Cheff Jimmy J has a great answer below. 

Something I do with mine is fry and then put them on a brown paper bag ( I reuse ones my bourbon comes in)  lay them there for about 3 minutes and then transfer them to a bowl with a paper towel for another 5 minutes then remove the paper towel and they usually stay pretty firm / crunchy.  
I agree chipotle anything is awesome
