I made up a batch of beef snack sticks yesterday and got pressed for time last night and did not get the color I was hoping for. Anything I can do to improve such as putting them in the oven? or just live with them and improve next time?

What color are you looking for?
Cure will change the color...Did you add cure?
Casings can be "Mahogany"or a "Natural" color
What color casings did you use?
Do they taste OK?

I was looking for a dark red color.  I used a natural color collagen casing. They taste great, next time either more smoke or use a mahogany casing.
