Hello all! I found this forum a few weeks ago and have been doing lots of reading. Thank you all very much for sharing all the information and also a thank you to the mods for creating such a great resource.

I live in Simi Valley California. I have been a barbeque fanatic for many years.I confess to using a gas grill but always put some sort of wood chips or chunks into the fire.

I have had a brinkman electric smoker for a number of years but only used it on rare occasions to smoke fish that I catch.

On a whim, I recently purchased an MES 30 and over the last week have began experimenting with it. My first meat smoke was some baby back ribs. They turned out excellent but could have been a bit more tender for my liking. None the less they were still pretty good.

Last night I made some shrimp stuffed ABT's which turned out excellent! I used some fresh jalepenos cut in half. I then mixed some onion and chive cream cheese and some fresh raw shrimp which I chopped up and mixed into the cream cheese. I also mixed in some of the jalepeno seeds along with some of jalepeno innards to increase the "heat". I filled the jalepenos with the cream cheese mix and topped it off with some shredded peperjack and chedder cheese followed by thick cut bacon. 3 hours in the smoker at around 230 and they were done. I was pleasantly surprised at how good they came out though I did pay a heafty price this morning as I ate a lot of them.

Today I am trying my hand at a pulled pork and some more baby back ribs.. I will save that report for the pork forum and will include some Qview as I have taken pictures of all my concoctions.

None the less, this site has been a great resource for me and I am applying much of what I have read here to my own techniques.

 Thanks for the info. I have made good use of the search feature and also taken advantage of the e-Course. I will definately have to check out the wiki's,, I love bacon! Thanks for that link!
