and the PP

I injected with Apple juice and captain Morgan did not put a rub on.not bad but I think it need something more so next time I think I will do both.

Is that homemade BBQ sauce in your first picture in the mason jars?  Do you can your sauce to preserve it?

That is a great idea canning your sauce.  I just did a big batch of homemade salsa.  Do you process them in a water bath?  How long?
