End Of Salmon Season

Well, even in Alaska, the salmon have dwindled down to a null.  Last 14 Silvers for the year, and a few jars of moose neck given to me by a friend..Sweet and tender and 10 pints of it total.

First; Silvers with Jalepanos:

Between this and another Salmon post I saw of yours, it looks like you're just about all set for a long winter.

Sorry if I'm ignorant on this, but what exactly is moose neck?  is it just the meat from the neck portion or some "other" way to have moose?
 
Moose neck is just the meat trimmed off the neck of a moose.  Theres about 20 pounds of nice tender stew-type meat and when taken off the bones makes for some great canned meat..Many uses other than stew.

OK hold up a bit what does moose neck or any part of the moose taste like? Is it just like a big deer or does it have its own profile? Unlikely to ever get to taste but curious just the same.

I don't know, the former sounded like loads of fun!  What else you going to do this winter?

I've never canned fish, but that looks like it will be fantastic!

That is awesome!!!  I did some homemade salsa and tried out canning for the first time.  Sure is time consuming but well worth it to have homemade goodies well into the winter.  How do you process those jars?  Hot water bath or do those require a pressure canner??
