Question about Fatties

My boss has authorized me to make 4 Fatties and 4 dozen ABTs next week to mark the end of summer. 

For the Fatties, I was thinking of skipping the sausage layer and using carne asada instead.  It would be bell peppers, onions and pepper jack cheese rolled into the carne asada then rolled into the bacon.

My questions are:

1. Should I still include the sausage?

2. If I do not include the sausage should I cook the carne asada first?

I am going to be using two gas grills in smoker mode to cook everything, and I know that w go by temp, but about how long will it take to cook everything to have them ready by Noon?

Sorry to add aother question to this thread.

I may not have enough time on Wednesday to create the fatties and ABTs for Thursday, so is it possible to create them this weekend and either refrigerate or freeze them?
 
I would say to freeze them, 4 days in the fridge seems like a long time.

Not sure though, hopefully someone with a better answer will be along shortly.

What about freezing the ABTs, will there be any damage to the cheese or jalepenos?

I think the jalapeno's may get a little soft, but they get soft when you smoke them so I really don't see a problem. The cheese will be fine.
