Does BBB taste different than Bellie bacon ?

The fat to lean ratios are different.

If you use the same cure for each the profiles will be similar.

Yes, if you use the part of the butt that has the fat cap it will taste more like belly bacon. Belly bacon has more fat in it and BBB is a little chewy because it's leaner. I am not a bacon expert, but have experimented with using a lot of the fat cap in making BBB & it does change the taste.

BBB is more hammy tasting, but stinking good stuff.
