I took my recently restored kamado-style cast iron cooker camping last week for some great vacation fare.  Smoked up a couple of pork roasts for the family.  Something about preparing great food just relaxes me; must be my need to feed people about whom I care...

I kept it simple: salt, pepper, & brown sugar...

Got a late start because the fishing was so great up here:

Rubbed everything down while I fired up the smoker...

My dad's little smoker/grill/kamdo sure drew a lot of attention around the campground.  I got compliments on it from the 2 groups on either side of us!  That'll sure make 'ol dad proud!

The roasts didn't hit temp until close to 8 pm -- the natives were pretty restless!!!  Resting roasts...

Moist and tender finish!  The BBQ sauce in the pic went untouched -- a high compliment for a pit master, I must say!  The meat and the smoke speak for themselves!

I was gonna save it for the fish smoke post, but you "smoked" it out of me early!!  And that was the best 5 trout on the last day (probably threw back 10-15 in 2.5 hours for the 3 of us.)

I like the roasts but I really like the smoker.
 
Love the smoker and the fish, dying to go camping but NM is still under fire restrictions..Looks like you had a great time.
 
The meat looks good.  The family pic looks great.

But I bet the best part was using that smoker.  Do you feel your dad's hands every time you touch it?  I know I feel my dad's hands every time I use one of his old tools!

Yeah, I think of him, for sure.  But he is still around, and has enjoyed seeing the outcome and eating some of the Q.  He especially got a kick out of people asking me about it on that last trip!
