Tri tip with Q-view

Found trimmed tri tip on sale for $2.98 lb which is rare in California these days so I couldn't let an opportunity pass me by. Rubbed with EVOO and did one in Chef Merito's steak seasoning and one in Pappy's prime rib rub. Into the MES at 225 and out at 153 and 156. Meant to pull in the low 140's but I got distracted slicing BBB from yesterday's smoke and keeping an eye on some beer bread I was grilling from Cowgirl's recipe. Not as rare as I prefer but still make for some good sammies.

 What a great price on the tri-tip.. they are hard to find in my area.

Tri tip is like a staple in the Californian's weekly diet so it's everywhere but in recent years it's gone from being cheap to pricey. Even costco is around $5 something a lb. On average I see the untrimmed stuff for $4.50 lb so this was a total steal.

Teez is right on.  That could have been pulled sooner.  He is on the right road.

For those of you who have trouble finding or identifying tri tips, check his first pic. You will see how the grain runs in two different directions.  On this cut, you have to slice thinly (about 1/4 inch) but ALWAYS across the grain.  This means to cut in two directions in different parts of the meat.  The first pic illustrates this perfectly.

Sorry for the double post.  I see Teez is using Pappy's seasoning.  I usually make my own.  As store bought (giving away my age with that saying) goes, it is pretty good stuff.  I like their regular seasoning.  They also make a Pappy's all purpose seasoning, which is very similar.  I really like the all purpose seasoning for tri tips when I am too lazy to make up something of my own.

No I totally forgot to save the drippings. Had a BBB slicing going on and making beer bread at same time. Got side tracked and ended up mixing up a powdered au jus mix

I have the Pappy's "choice" or regular seasoning too. Goes good on chicken, burgers, turkey, pork loin, you name it. Pappy's is pretty good for store bought especially on the lazy days when I just want hurry and get smoking.
