Okay so my Dad and I have gone back and forth for a while on a temporary fix for cold smoke generation and we've come up with a few ideas that I'd like to run past you guys (they call for some builds which is why I thought this was the best forum for it).
First idea is to take my Master Forge Vertical Electric smoker, turn it as low as possible while getting the chips to smolder and just freezing a giant block of ice in the water pan. If thats still too hot we could also put a frozen jug of ice on the bottom rack to increase the amount of cooling. (he also mentioned using Dry Ice, but that seemed like a bad option due to CO2 putting out any smoldering I have going).
Second option was to take the bottom section of my smoker (its basically a tray with lava rock and the electric element), putting some sort of lid on it and using vent tubing to transfer smoke to a food grade bucket. The vent tubing would be in place to cool off the smoke either by air or by putting ice around it. This idea seems solid and could be done on the cheap (find a cheap kettle grill lid, get a free food grade bucket from a grocery store or something and vent tubing is cheapo) however, the plastic concerns me.
I don't have numbers yet on how cold I can get my smoker but I figured it couldn't hurt to spend 5 minutes and run the ideas past you guys/gals and see how dumb I am.
