Many Butts on 2 WSM's w/Qview!!! Finished butts!!!

Started Smokin' last night at 7:00pm. Using cherry, hickory and lump. I have only used 18lbs of Cowboy lump between both smokers. 13 butts total, 8 on one, 5 on one. Smokin' the butts for two party's today and people at work. 16 hours for 8 of them and 20 hours or so for 5 of them.  More to follow!!! Thanks for lookin'

Nice looking butts! Just when I think I've seen it all with the wsm I see something like that!!! How do you like to use that cowboy lump on there? How many times during those 16 hours did you have to add coals? Vent positions? I am thinking of switching from the blue bag to cowboy lump. Don't like the way kingsford burns on my wsm. Thoughts?

Cowboy is generally a last resort lump. See if you can find Royal Oak or Lazzari in your area. When using lump in a WSM it is critical to get a tight pack in your ring if you are doing a long smoke like butts or brisket. If you don't pack the lump really tight it will get to much air in the pile and burn very hot and very fast - even with your vents closed.

Biggest thing with lump is don't let the temp get away from you. Tight pack the ring, dump 1/4 to 1/2 a chimney of lit lump on top, put the smoker together and watch the lid therm. As soon as the lid therm hits 200°, fill your water pan with HOT water, watch the lid therm again, at 200° close two of the bottom vents al the way and the third one put at 50%. Keep watching your therm and adjust the third vent as needed to dial in the temp you want.
