A few days ago i wrote a thread on making Merguez Sausage

 today i took it out of the fridge and i threw it on  the  grill.

it was yummy  we Had it with tahini, pita bread and pickles. thanks

Good looking links. I read the accompanying post for the recipes. They are on my list to do.

Did you run the meat thru a food processor after grinding? Looks like it is about to be emulsified?

First saw it on Princess' thread awhile back.

That emulsion thing is something I have been missing in my tool bag.

i just grind it twice and mixt well with my hands
