Well I finally got a chance to use my GOSM..I smoked a 3# Tri-Tip...The first 45 minutes or so it kept the temp I wanted 225...But after I added wood....it seemed to creep up no matter what I did..It still never got over 250...It was sunny and about 80 that day...We will be in the triple digits soon and Im thinking I will have problems keeping the temp down then....

It only has one vent and I had it opened all the way

No im using a digital probe...I guess I'll just see how acts when its hot then decide if I wanna do the Needle valve mod..I just worry about it being to low and blowing out

Any way you could keep it in the shade?

I use a needle valve and I've never had a flame out, I can go as low as 160° in the shade with the ambient in the 80's.

I use a Maverick to monitor the smoker temp and set the alarm for the 5° below smoking temp, ...just to be cautious.

you got three vents, just like flash said,   but they have tabs on them and if you bend the tabs you can at least double the air flow,  and keep the water tray full of water, but keep an eye on the water as you need to add more during the smoke,  keep the lid on the wood tray and the chunks should not catch fire,  if you still have too high temps   just crack open the tank and that would stop gas flow but if its too little the burner will blow out     also watch temp as the lower the rack equals higher the temp inside the chamber

He might not have 3 vents. The small GOSM only had one on the top. My big block has 3.

Did you have water in your water pan? When the temps spiked was the water running out? I find that with the waterpan gets low the temps start to rise.

Yeah I have the 20" so it only has one vent on top..I do have a shaded porch so I could put it in the shade..I had just filled it before it got high

After following the directions from the manufacturer, a needle valve is your next best choice.

I have had the same luck as Gene with my 3405

My 2nd smoke was today...Ribs! Beef and Pork,,,It was about 15 degrees hotter today (95)....It was a chore keeping it under 245 during the hottest time of the day...I put it under shade, adjusted regulator, adjusted vents,I even put vise grips on the propane line...it held temp when there was almost no sun out...I will be ordering the needle valve from Bayou Classic.I think with the kind of heat I will be facing this summer (100+) it is the only way to go...On a diffrent note..I noticed my wood chunks arent burning all the way down..They get competly black but only burn for 35 minutes or so...They never get to ash..BTW the ribs were  great!

I sometimes can have the opposite problem.

I use a single burner cast iron propane stove in my old GOSM Charcoal union. Now I just use the can, with wood and some charcoal right over the flame. No more pan. But if you notice there is a valve on the propane stove and if I do not turn that fully off, when first turning the valve on my Propane tank, fully on. Once it seems to pressure up, then I can open the valve on the stove and fire it up. I do have another regulator I bought that has a much stronger PSI and hope I can press it into use.
