So if you haven't heard me mention it before I won an electric grill in a raffle at a chili cook off I competed in. I was gonna sell it but found out my apartment lets you have electric grills so I said why not keep it. It serves me somewhat of a purpose like grill marks and a decent char but I still miss the fire flavor. I had read in the manual you can put wood chips directly on the grates and it just so happened my long awaited shipment of pimento wood chips and charcoal just arrived so I was in the mood for my dry rubbed jerk chicken fajitas. Excuse the pictures it was dark so the light for the most part was from a small flashlight and taken with my phone. On with the show.....

Finally got some pimento wood chips, couldn't find chunks. I also got pimento lump charcoal. It's expensive but the flavor is totally unique. If you don't know what pimento wood is, it is also known as allspice, the wood has the same scent as the berry which when ground is the allspice you buy in jars. You can see in the picture where I ordered it from. It is the only place I have seen import it.

I use a dry jerk rub for the fajitas (wet for authentic jerk). Let it sit in the fridge for at least an hour so the spices work in the meat a little.

Chicken started next to the chips with the cover closed then finished directly on top of the chips. No smoke ring but it sure imparted the flavor of true jerk. It took me a while to find pimento wood but thats what they cook on in Jamaica so now I am very happy. The wood sure makes a difference.

Final product cut up then topped with jack cheese, grilled peppers & onions, lettuce, tomato, sour cream, and a squeeze of lime juice.

This was my wife's fajita, she likes the lettuce but trust me there is a lot of chicken under there.

Nice smoke, and nice score on winning the rig!  A great solution to apartment regulations!  How did the smoke flavor itself work out?  Did you get enough smoke in that set up?
 
A little suggestion regarding the wood chips and elect. Grill.

Wrap the wood in tin foil and poke holes on top. Much easier to clean up. Then when done and cooled off just throw away.

Throw Ashes in small can with some water for safty with foil open to make sure ashes are soaked then throw away.

Big Twig, That elec grill looks like it does a good job. Great lookin' chow.

At the altitude you are at (14th floor) there probably isn't enough air for any other unit.

I know my bride couldn't breath up there.

Thanks! I took my wife to dinner at the Rockhouse in Negril, Jamaica and I saw jerk chicken fajitas on the menu so I ordered it. I loved it so much I spent the whole time trying to figure out what the spice mixture was and what was in the fajita so as soon as I got back to the us I started working on the recipe. I have been making this for a long time now but had never had pimento wood to cook on. Now that I do I feel that the recipe is complete. The chips were smoking just enough to impart a great flavor. Because I was cooking on a electric grill at high heat I knew I wouldn't get a smoke ring but you sure could taste the smoke flavor.

This time I was just so happy to have the chips I didn't want to waist many on the electric grill and save them for the smoker and charcoal grill but I wanted to use them so I figured I would try the chips on the grate. I would definitely use the foil if I do it again though.

Thanks, the grill serves it's purpose I suppose and at least makes me feel like I am grilling. The 14th (13th) floor isn't that high, haha.

I really like the site considering I haven't been able to find pimento wood for a long time. In the future I will get the leaves and sticks as well. It is also a very informative site and they do have some good recipes. I learned jerk from several jerk shacks and road side drum cookers in Jamaica and was fortunate enough to be taught how to cook the authentic recipes by some of the best jerk masters on the island. I can't wait to go back it's a year over due, but I have at least 2 Jamaican parties a year where I make all of the authentic favorites but this year will be better now I finally have the wood.
