I got me a case of 5 bellies/60lbs!  Not the greatest deal at 2.25 a pound but I wont have to order any more for a long time and it is the cheapest I have ever paid for them lately.   Also first time to have skin on but thats fine to since I can use the skin for something else.

Nice score Jeff. Cure the bellies with the skin on, when you smoke them the skin turns hard and then it's easier to remove. The rind will not affect your smoke penetration. Cut the smoked rind into 1X2 inch strips and deep fry 'em for some cracklin's.

Thanks, thats how I was thinking of doing it and since you suggested it I have no doubts about doing it that way now, 
 
I thought I was the only one on the forum that smoked bellies with the skin on.  Thanks Dutch!

I find is easier to fillet the skin away from the belly after smoking.

Smoked pork rind is also good as seasoning in slow cooked beans, adds some of that fatty, smokey flavor that I just love.

Thanks guys,  I just made my wet cure and have it chilling in the fridge.  I will post some picks of the bellies cut in half once I get them pried apart.  I hope they are nice and meaty

Pops told me to leave the skin on til after the smoke.

It has no effect on the smoke penetration and it comes off a lot easier warm.

What is the wet cure you are using??

I used to have an old fashioned market order them for me but this time I went to a local commercial food supply company that supplies wholesale stuff to resturants and grociery stores and had them order me a case.  I bet you can find some place that gets fresh pork to order it for you if you got the entire case
