I bought a couple of stainless baskets and thought some smoked wings would be the perfect test run for them.

Two hours at 250 with pecan wood smoking the entire time.  They they had a great smoky flavor behind the chipotle rub, but no smoke ring in the meat with such a short time in the smoker.

The wings look great. Those baskets are neat too. How do you like that Chipotle powder?  I add some garlic and some onion powder to mine for a little extra kick

Just out of curiousity, how did the baskets help you?  I usually just put my wings right on the racks and have never had issues with them falling through.  I have been toying with buying some baskets but wasn't sure what they would bring to the table.

Great Looking Wings...

By the way, Where can a person get baskets like those?

I love the flavor, but like a lot of commercial mixes there is a lot of salt so I have to be careful not to use too much.

Easy in, easy out.  You don't have to place each wing on the rack and when they are done you just lift out the basket.
