I saw a video where Jacques Pepin was showing how to de-bone a chicken to make something called a Galantine.  Since his instruction was complete I decided to give it a try and make my own video showing the process.....



The bird turned out juicy and was very tastey, though next time I plan on adding some beat egg and bread crumbs to

give the stuffing some more body.

I should point out that J.P. mentions it should take one minute to de-bone a chicken.  It took me 24 minutes, I need to do this s bunch more time to get my time down. 
 
nice job and good vid too!

i had the pleasure of cooking next to JP for a day once and it just solidified that he is the best the food world has to offer. his approach is simple, direct, and in the best interest of what food should be.

Not sure why but I see the video in my original post when viewed on my desk top, but not when I look at it from my iPad.  From a few of the responces others ar having the same problem....
