2 Pork Butts 1 sweet & 1 savory w/ QView

Hey all, I have been smoking a lot of pork butts lately, but I have always done them with my homemade Brown Sugar based Rub... I got 2 on sale and decided i would do one more savory, sort of along the lines of an Italian style pork...

Here are the 2 butts... got a pretty nice sale on them!

Here were my seasonings on the savory rub (I also added some minced garlic, and rosemary)

Fat cap trimmed & Ready to be rubbed (used olive oil)

I let them sit over night in the fridge and the next morning i applied more rub to the sweet one and just some SnP to the Savory one

The Sweet one hit temp first here it is before resting

And the savory one took another 45 min (surprising since it was smaller... she stalled for a while)

I wrapped and let them rest for about an hour and a half and pulled them

End result: they were both awesome... the savory pork was a hit, but something about the sweet one that is just more BBQish to me LOL, whatever that means... I smoked them in Apple Wood @ around 220-230... I served the Italian style with sauteed spinach and garlic w/ provolone & the sweet one w/ Sweet Baby Rays & Cooper Sharp (also used Soflaquer's Finishing Sauce for the 1st time on the sweet one... good stuff)... Everyone loved both... I guess i didn't realize how much a rub really defines the flavor profile of your end product... they were totally different in flavor but both awesome none the less!

Thanks Bear... UGH!!!!!!!! this is getting ridiculous... I woke up at 7am to shovel and didnt get the driveway and sidewalk done till about 9:15... made it into work about an hour and 1/2 ago... What can you do right??? I know one thing! I am investing in a snow blower at the end of this season (which will than cause little - no snow for the next 3 years LOL)...
 


My drool kept running sideways.  Great job with the details & variation of the smoke.

HAHAHAHA! I hear ya... i had those butts waiting in my fridge for 2 weeks before i could get a chance to smoke em...

Where is spring? This newbie smoker has a newbie, MES smoker, untried and untested. Northern Illinois is just cold.
 
Great looking smoke for sure. I need to get a smoke in this weekend.  Was going to do some chicken today but got stuck on the phone with customers for 3 hours. Pesky folks anyway

Hey tommerr, pull it brother!  It's been colder than a witches you know what up here in Mass and I have my MES out pretty much every weekend.  the night I seasoned it it was 15 and was able to get it up to 250 in no time.

If you wanta smoke some cheese, do it now. It won't be long, people will be complaining, "It's too hot to smoke cheese!"

I have been in the mood for ribs and brisket for the past few weeks, but i have a few other things i want to try... i hope to dig out a spot in the snow for something this weekend... fingers crossed!

Yeah buddy, get out there and smoke some stuff on that MES. I live in Northern Illinois too...Winter was the reason I bought my MES, it works great and no fuss with a charcoal smoker in the winter trying to keep temps right.
