Kathy and I are testing recipes for our 4H gourmet cooking class and we just tried this one. It is really simple and would be a great item to take to the office this time of year

Chocolate Truffle Brownie Cups

1 box Brownie Mix
1/4  cup water
1/2 cup vegetable oil
2 eggs
2/3 cup whipping cream
6 oz semisweet chocolate morsels

1. Heat oven to 350

2. Place miniature paper baking cup in each of 48 miniature muffin cups

3. In a large bowl stir brownie mix, water, oil and eggs until well blended

4. Fill muffin cups about 3/4 full  ( about one tablespoon )

5. Bake for 20 -22 minutes or until a toothpick inserted into the edge of muffin comes out clean

6. Cool 10 minute before removing from the pan

7. Cool completely- about 30 minutes before going on to next step

8. Heat whipping cream in a 1 qt sauce pan over low heat until hot but not boiling. Remove from heat and stir in the chocolate until melted.

9. Let stand about 15 minutes until the mixture coats a spoon. It will become firmer the longer it sits

10. Spoon about 2 teaspoons of the chocolate mixture over each brownie

11. Top with sprinkles

Servings: 48

Yummy. Chocolate on top of chocolate. Doesn't get any better than that!!
I almost sent this to you in a PM but had not gotten around to it when I saw your post - I knew you would be all over this one

 
 
See whatcha went and made me do Gary! The box of brownies I used had the recipe on it too. I buy the giant Hershey's box from Sam's so I always have something quick for the neighborhood kids. After I let the ganache cool for just a few minutes I dipped the cups, two at a time and shook off the excess. That went really quick, but I had way too much ganache. The recipe on the box said I'd get 48, but I  got 32. I filled the cups almost to the top though. I also topped mine with Andes Chocolate Mint pieces. Love that little bit of mint flavor with the chocolate. They are super yummy and even more super easy. I want to try topping them with some chopped up peanut butter cups too. Thanks Mr. and Mrs. Scar! Oh yea, almost forgot, I only cooked mine for 18 minutes and they were perfectly done.

We did ours for 20 and they we just a touch dry. Kathy used two spoons to do the ganache then we topped them with sprinkles cause that is what we had.  I am going to send you a peanut butter chocolate cheescake recipe that we do in muffin pans too. Look in your email in about 30 minutes - gotta run as we are making chicken mango jalopeno sausage and it is time to grind
 
I've eaten about 12 already! LOL! They are so good and quick and easy. I'm kinda on a chocolate high right now.

Looking great, Gary.  Then Cheryl chimes in with another batch!  My doctor at the VA keeps telling me I'm diabetic.  I told her I can't be because I like chocolate too much.

 But according to the Nutrition facts they are only 43 calories each - something wrong with the calculation on that for sure I need to go back and check the recipe data

Well you two have done it now. Both of them looks awesome and I wish I could just dive. Now you have me heading for Venniraro's for some of the best desserts in the Loer east side of New York City. Thanks really. I love Venniraro's
