Hi everybody,

New here...

MMMM...I really suck at introductions

I'll just start with, I've been pickling and making Jerky's and grinding my own meats for 30 years ...

I co-own a website called dtsfab,It's an off road build site... where I sell pickles, jerky, and just added meat sticks to the menu, I sell these world wide. Well the jerky and spices...

It's a pretty small operation about 550 quarts of pickled goodies a year and around 300 pounds of jerky...And about 50# of home grown spices

I grow all my spices, in a 100% organic garden...

Recently My Partner on DTS and I purchased a bar and grill, I joined up to broaden my horizons on the foods that others are preparing,

So I'm ramping up to double those numbers

I found this site while searching for a better patty maker,Other than that there's not really much more to me

Just ground up 12 pounds of Chorizo,and stuffed

and 15 pounds of hamburger Type ground beef...

I'll post some pix up before I leave for Coffeyville if I have some time...

My poor Ol' 71 chevy Pickup has 300 Quarts of pickles on  board...40# of jerky...Plus a car trailer loaded with a freezer full of meat,Smoker, apple,cherry,maple,and some mixed hard woods...

And my WILD ONION PATCH

I've been cultivating these for 10 years to get the size and productivity that these produce...I'll have to get some pix

If I were closerr to you, I'd be willing to trade some fire roasted NM chile pods for some of that chorizo. Just a dream, just a dream...

First off Welcome Spec to SMF.  You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
