Storage & Freezing??

Hey Gang....

Thinkin bout fatties...aren't we all!! What does everyone think bout long-term (week to a month) storage. Obviously, best right off the grill, but would be nice to make a few at a time and not have to gorge for 48 hours straight..

Don't have a vac pack machine yet....thoughts??

They last just fine frozen and eaten later. When the kids lived with us I would make 6-8 at a time then freeze some and they stayed just fine I did vacuum seal mine but using a Zip Lock type freezer bag should work fine for a month I would think

Now I agree with Jerry (pineywoods) and the fatties is a great smoke now eat later food. I would run right out if you can and buy a food saver or a descend food vacuum system. They will pay for themselves in no time flat. I have worn one out so I have used them alot. We smoke alot of things and then freeze in single serving pouches. I even make the bags big for the first couple of times and then wash them and re-use the bags. They do get expensive. Now the good folks around here will let us all know when you can get a good deal on the bags and when they have killer sales on them to.

Thanks to all for the replies. Yes, def need to get the eye out for vaccuum machine. Friend of mine cooks comp BBQ and use it all the time. Reheat in hot water and meat comes out like it is right off the smoker...damn this expensive hobby...LOL

Sorry to resurrect an old thread, but I'm new to smoking and this forum.

I was wondering if it would be a better idea to freeze fatties pre or post smoker.  Since I will probably have way more stuffing material than needed, I thought it would be a good idea to roll multiple fatties and save them for later.  I was just unsure if it would be best to freeze rolled and raw or rolled after smoking.
