i was watching thisshow on food network lastight (i love this channel) and this guy was visiting resturants and this one bbq res. had an item on there menu called "redneck taco." it was pulled pork with coleslaw and bbq sauce together on top of,get this, cornbread pancake.it look absolutely amazing.

i always eat my pulled pork with coleslaw on top but i would have never tried this. but im going to this weekend.

The show you are talking about is Diners drive ins and dives (DDD) with Guy Fietia. I watch and tape it all the time. I travel alot with work and I try to find some of theses places. I have found one and it also was BBQ and the place really suxed. But that "cowboy Taco" sounds like a good idea. So let us know how it turns out and don't forget the q-view when you make it too.
 
we didnt do the cornbread pancake (which I understand is the unusual thing here), but a competition we were in allowed us to sell anything except pork butt (it was a butt only comp) the friday night to the masses for our own profit.  We decided to do pork (loin) and chicken tacos... we had a line snaking around our tent for 2 solid hours when all the other guys only had folks trickling by! 

Some chopped pork loin w/ sauce topped with some of my wifes original avocado slaw... all for $1?  No wonder we sold out!

I sure would like to try a cornbread pancake though... maybe with a nice slice of breakfast fatty on top.

Guy visits some unique places, with some tasty treats.  I DVR all of them and love the show.  Man v Food is another great show that frequents the Que scene.

Well guys we are a pinch of this, smidgen of that, kind of cookers.  The ingredients are simple. 

Small avocado chunks,

diced red cabbage,

salt,

pepper,

garlic powder,

lime juice.

Also, you can add diced white onions if you feel led to do so.

Other than that its mostly to taste.  We usually do about equal portions of the avocado and cabbage, then add the other stuff to taste (with lots of lime juice... thats pretty much the only moisture in there, no mayo in this slaw!)  Its actually not too bad for ya.

Its pretty simple and seemed to go over well.  Not too bad for something my wife whipped up out of left over stuff around the kitchen one night last year!

Thanks guys.  I'll try to have her write down the portions next time.

Do you remember the name and location of the restaurant where Guy featured the "Redneck Taco"?

I would really like to have another look at the smoker he had that he did his hog in.

I have not tried this with a cornbread pancake but have been told its amazing. I usually do all of the above but I slice avocado on top of the slaw and a bit of cheese (I love cheese) and use a corn tortilla heated up on the grill. Sounds about redneck enough. I will have to try out the avocado slaw that sounds very good.

I know this is an old thread, but the place y'all are talking about is Martin's BBQ Joint in Nolensville, TN. Martin's is one of my favorites!
