mixed up 15Lb of snack sticks about 3:30 today. In the fridge mixed every 10 to 12 hours.  going on the smoker sometime Saturday. qview coming on Saturday.
 
Can't wait for the Q-view any special recipe you use or a pre-packaged mix?. Considering doing  a 25 lb batch of venison/pork summer sausage this weekend myself. Good luck on the sticks!
 
I have my own recipe that I have perfected over the years. I usually use venison but was out so I substituted hamburger.

5 lb ground pork shoulder

10 lb venison

6 tbs Morton's tender quick

9 tsp garlic salt

12 tsp coarse black pepper

9 tsp mustard seed

6 tsp cayenne pepper

grind pork butts and venison. in a mixing bowl mix all ingredients and set aside. I an large mixing bowl or tub mix the ground pork and venison until the color looks constant throughout. add about  of the seasoning at a time mixing well as you go. when you have it all mixed in evenly, cover with plastic wrap and refrigerate for a minimum of 24 hours. mix 1 to 2 times during  this time. smoke at 190-210 for an internal temperature of 165-168. remove and enjoy.

I use this same recipe for my summer sausage. to me and my family it has just the right bite, but you may want to reduce the cayenne if you don't like things hot. I would describe it as mildly hot, but every ones taste buds are different.

First off thanks for the recipe I'm always looking for another good recipe so I can make some snack sticks for our troops. I like the sound of the recipe too. I happen to have some more venison in the freezer I need to use up and a friend of mines son is in Afganistan fighting for us too.

Well the sticks are on. It has been a long day already with a lot of differant things going on. I had to substitute hamburger for venison  and I am not quite happy with the results. My wife, two daughters, and two son in laws are loving it, but I think it needs something. It is probably me, we as smokers tend to look for perfection. Don't get me wrong, its damn good, well I'm sure you all know what I am trying to say. I also through on a ham and had the wife pick up  two pork butts and a ham. I cut the butts into pork steak and country style ribs and seasoned a few to throw on the smoker. Qview comming soon.
