Got the TBS running this morning in the Klose.   Love the weekend smokes!  Decided I havent done a dudestrami in awhile, so I pulled two pieces of corned beef out of the freezer yesterday.  Soaked them overnight, and rubbed with CBP, garlic powder, onion powder, brown sugar, and about half of the seasoning packed that came with the corned beef.   Smoker would look too empty with two strami's in it, so I trimmed a rack of spare's into St louis style and rubbed with a new recipe.   As I was tending the fire this morning, I noticed I have a bunch of Aneheim peppers and some corn that need picking, so it looks like I'll be doing some ABT's and smoked corn as well..  Lord I love the weekend!  I will post up as the smoke continue's.

I soaked a couple ears of corn for an hour, then put them on the top rack for about 45 minutes.   Really added a new element to corn.  Just a slight hint of smoke, but they were cooked perfectly.

Pulled the ribs out..  Best batch yet..  I am getting closer to the flavor I want.  First words out of my neighbors mouth were "oh my god"  Always a good sign.

Dudestrami is great as alway's.  Love the stuff.  Tonight was PLT's.  Pastrami Lettuce and Tomato sammies.  Mator's out of the garden have been really good this year.  Sorry no plated pics.  I was too busy getting food on the table for the family.

Best time for sales is just before or just after St. Patricks in March.  We buy a number of corned beef then, and freeze to turn into pastrami later.
 
Great looking strami. I do the same as dale and buy the leftovers after St Paddy's day. I get them dirt cheap and freeze them for the rest of the year.

BINGO!!!!!!!!    My lovely wife went on a spree at every place that had great sales and bought about 15 of them when they were on sale for 1.49 or less. 


 
Man, I totally wish i had ur smoker today.   Nice looking smoke.  hope u were happy with it!
Very happy with it all Dude!  The strami made for great sammies last night. We consumed the smaller one last night.  This is why I smoke at least two of these addictions you created.  I was also really happy with the ribs.  Made a big step towards the flavor profile I have been looking for in my comp ribs.

Those are really good looking ribs and pastrami you got out of your great looking smoker. Your neighbors are very lucky people.

LOL nope..  The truck is well..  A TRUCK!    

I sprayed the outside as well as the inside with the oil when I re seasoned it.  Makes it look all nice and shiny.
