ribs and stuffed beef... dutch's beans too!

hey all-

this is a smoke i did a couple months ago. sorry for the delay

here's the ribs





here's the stuffed beef. i marinaded it in jamaican jerk.

 

and the wife making dutch's wicked bean. these were really great.

   

smoked with peach @ 225*. i took the beef to 155* and let rest.

what is that beef cut? are they all stuffed the same?
they're all stuffed the same. to be honest, i can't remember for sure, but i'm 99% positive it was chuck. i sliced it about an inch thick, then pounded it out with a mallet.

Gosh darn it I wish I lived closer to you for I could get in on some of that Q. Now Iike the stuffed beef specially when it was marinaded in Jerk Seasonings. We as a family are Jamamerician we have travel to Jamacia many many times. Now you have ribs to go alone with them too. Then to top it all off you are smoking it with some peach I love that wood I have just started using it for maybe a month now. It GREAT. I'll have to check back in later to see the final products.
 
looks great! i love me some ribs! i need to do some again soon with Jeff's rub! how was the beef? it looks good. i like pineapple.
the beef was a little tough but better when sliced thinly. the ribs were phenomenal as usual. my rub recipe is really getting good. i'll post it if anyone wants it...

thanks! yep, peach wood is great. i've got a rack of pecan too. if you haven't tried pecan before, go for that as well. pecan is really mellow.
 
 
Everything sounds great, thanks for sharing. What is your opinion about the Jamaican jerk seasoning? Can you tell us the source? The reason I ask is because I have not found a Jamaican jerk seasoning that I like. It's all good my friend.
 
I'm always interested in another rub recipe if you are willing to share.

Do you have any pics of the completed product?
no pics of the finished product. i tripped and fell onto a bunch of beer that night

i get the marinade at whole foods but i came across some at the harris teeter at the beach yesterday. it's called :marinade bay - jamaican jerk" and it comes in a small green bottle. they usually keep it in the meat dept. good stuff.
