1st Dino ribs on my new pit

It always pays to have a great wife that loves good BBQ.  I got my new pit yesterday (that story and pics here).  I had picked up a bunch of meat on Thursday, so I would have supplies ready to smoke the weekend away.  Amongst the supply was two racks of Beef ribs.  Wife decided today we eat ribs (invited her parents over), and tomorrow I get to do two shoulders and a Brisket.  That will be tomorrow's story.  I rubbed both racks with spicy brown mustard, and some of my signature beef rub.  Here they are going in a little after lunch.  (wife doesnt get home till 7)

Bones about to be foiled.  Spritzed with apple cider.  Looking good so far!

Will update when I pull them out here in a few hours.  Going to finish them with my Honey Chipotle grilling sauce during the last hour.

Man those have a beautiful color on them already. Can wait to see the finish.
 
And here they are..  4 adults and one half pint finished off all but 2 bones from two full racks!, and those got saved for momma's lunch tomorrow. They definately had fantastic flavor..  I will not be waiting so long to do beef ribs again that's for sure!  My only tweak is I will give my next batch about a half hour longer in the foil.   I did a 3 - 2 - 1 on these running about 230° to 240°  Not quite falling off the bone tender.   Finished them the last hour with my Honey Chipotle grilling sauce.

I've got a big favor to ask.  I'm going to be in Parker, just to the south of you a few miles from August 12th thru the 24th.  We're having a Family Smokeout (a couple of youngsters want to take on the old man........) and I'm planning on doing Dino's.  They're still hung up on pork (not that there's anything wrong with that, but....)  Would you be willing to diviluge the location of where you bought your ribs?  I promise to not tell anyone else, if you so desire.  We'll be on the road for quite a while breaking in a new travel trailer so bringing some with me is totally out of the question and I'm kinda a stranger to your neck of the woods.  The only place I know is the Middle Park Meat Co. in Kremmling.....fantastic bacon and beans.

It's no secret..  Safeway had these on sale for 1.47 a pound..  or at least the one in my neck of the woods did.  I am not very familiar with what's in the parker area.  Wallies meats in Broomfield has always had good meats.  Not always cheap of course, but good stuff.  Good luck puting the smack down on the youngsters, and Thank You for your service!

Alrighty then, I guess I'll just go trolling around when I hit the area.  I've got a couple of days, well just one, the 13th, but I'm sure it'll be adequate.  Good meat seldom comes cheap.  And in this situation, cheap ain't a consideration. 

The youngsters in question have been pointed to this site, one is even a member - of sorts, but they expect the old man to give out all the secrets.  Not a snowball's chance in a very hot location, underground, of course.  At least not until after the showdown. 

I just hope my efforts are equal to yours.  They are some mighty fine looking ribs.

LOL  my wife's parents came over to taste the Q off the new toy..  Funny you should ask about Barney & Betty.  The mother in-law's name IS Betty!

My little Bam Bam (which really fits him) likes smoked hot dog's, but hasn't taken to Q like his little sister.  His little sister will be in hog heaven tonight.  I have a couple pork shoulders on today, and she is a pulled pork junkie :)
