Hola everybody!  Just signed up, chefrc told me to swing on over and say howdy.  Im actually looking out the window as I type this at my smoker, with a little 7lb brisket goin low and slow...mmmmm

went really simple.  rubbed it once over with alot of dried ground mustard, then cheated and did a light rub of montreal steak seasoning.  Ill get a pic of my smoker up once i get it washed....its next to my shed which I powerwashed and repainted this weekend, so it looks like it got snowed on...lol
 
Welcome Caleb! Nice brisky ya got there. I think it's safe to say we are all addicts. I smoked ribs today and will wait till the last minute to go shower cuz I keep smelling my hair. Loreal needs to make a smoke scented shampoo. I'd buy that.
 
oh it was good! i did have a little toughness in part of the point tho...maybe need to smoke longer? i smoked it for ~10 hours @ 200-220

Your Brisky looks GREAT !       I love that close up!

As for your "little toughness", most on this forum will tell you to smoke it to 165˚ internal. Then foil it & put it back in. Then pull it at 195˚ if you're going to slice, or 205˚ if you're gonna pull it. Then double foil it & wrap it in towels, and put it in a cooler for an hour or two, or even longer. It seems to work GREAT----Tender & moist.

i will give that a shot on my next one.  I do have to correct myself though, the point was melt a part tender, it was part of the flat that was tough

First off Welcome Caleb to SMF. you'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
