I normally do 2 slabs at a time, but got my big boy pants on for the fourth and am going to do 6 slabs of spare ribs. Normally I wait till the morning I am going to smoke the ribs and demembrane them and rub them down. After they are rubbed down I wrap them in foil and put them in the fridge for an hour or two or right on the smoker if I am running late because of the bottle flu the night before. After all of that is there any down side to going ahead and doing it today or tomorrow when I have plenty of time and letting them sit in the fridge rubbed down in foil for 24-40 hours ahead of time?
