Low Cal Fatty Help?

I am wanting to smoke a fatty for my Mother, but she's been doing this weight watchers thing, and counting her calories. I was think of making a fatty with ground turkey, turkey bacon, and stuffing it with fresh spinach, apple pieces, dried cranberries, and some kind of cheese. I am stumped with the cheese, any ideas of what would be a good cheese that is low in calories (I need something I can find at most any store)?

I've used ground Turkey are that has worked out well. Personally, I'd skip the Turkey Bacon. My 10 year old son LOVES Feta Cheese, so I made him a fatty with spinach, sauteed garlic and Feta. The meat was ground Lamb and the rub was some store bought Greek seasoning, no bacon on the outside.
It's a keeper!
 
Hey...I know I'm a newbie, and haven't done a fattie yet (this weekend I embark!) but have you thought about the Laughing Cow Light Cheese? This is very tasty and is used on the South Beach diet. It comes in two flavors; Swiss and Garlic and Herb. I love the Garlic & Herb. Nice soft cheese, low calorie, and great flavor!
 
I have made them with ground turkey and turkey bacon and they are very good. Here's one I made with both and cheese, pickles and wasabi horseradish.

Well I am going to be throwing this together this weekend.  I got a pound of ground turkey, turkey bacon, and will be filling it with baby spinach, chopped apple, cranberries.  I also have this Weber N'Orleans Cajun seasoning I am going to rub it down with.  I think she will really like it.
 
I still consider myself a newbie with all this and I’ve only made one fatty. I also commend you for trying to make a low fat “fatty” but isn’t that a lot like trying to a martini without alcohol?

I just had an idea of lowfat cream cheese going good with that.

I would use parmesean cheese. You don't need a lot of it since it has a lot of flavor, and the parm goes well with both spinich and apples.
