I just created a new Wiki on cutting up whole chickens, I thought might be helpful for some members.

Good luck.  People here treat chicken like it's the flu.  I guess they all think that they're too good to smoke chicken.  I've posted several chicken threads here in the past couple of days, and no one will respond to them (well, maybe I'll get one response).

It would piss me off if I were sensitive, but I'm not.
 
lol someone woke up on the wrong side of the bed haha i think people are just to confused with the new board to comment on much, i saw one of your posts last night and was gonna comment but just didnt i dont know why? That is a great video of how to cut up a chicken.

Well, I'll respond, first because this way I can check out the "new look" and further make a comment about "chicken".  It is really too bad that the world is populated with narrow-minded, my way is the only way, die-hard fanatics who can't see beyond their own specialty.  Personally, I think they're afraid of the challenge of smoking a delicate meat.  Yes, poultry (I love to smoke Turkey as well

) can be easily ruined if you're not up to the task.  Next, someone will be saying that fish don't belong in a smoker either.

I say, bring it on.  Heck, I'm getting ready to smoke some oysters on the half shell.  Yah know, just a dash of lemon, a touch of cbp and some patience.  Dang, now I'm hungry.....
 
I like smoked chicken also.  I smoke some large prawns not to long ago it they were goooood!  And ya.. I have been surfing the boards today just trying to get a feel for things.  I did notice that some picts are not showing up?

Please don’t hold off on the poultry posts.

My doc has me quarantined from pork so I am looking for new ways to do beef and poultry.

I personally like chicken and I smoke whole yard bird alot. I have also found that there are not as many folks here commenting on alot of threads here either. I guess it the new layout of the new program that folks are still getting used to also. Heck Bret I'm sure I commented on it I have been here alot lately with the work slowdown and all.

Fish should never be smoked, only grilled.  I don't know why someone would want to smoke fish.

I like seeing the Fish, Chicks, Hens, Brisk, Pork, Beef, Veggies, Deer, Lamb, Goat, etc. that are posted here.  Hell, if I could have, I would have smoked the crow I caught once messing around my car & post the qview.  Yep.  A little EVOO, some CBP....maybe some of Jeff's rub.....hmmmmmmmmm.  Would I care if someone commented on it?  Nope.  Just as long as I can prove it did it.

You gotta try some wild caught salmon smoked. It will make ya a believer.

I must say that chicken can be challenging...that's why I keep trying when I can. I have my wife look for whole birds every few months just so I can keep my skills sharp. I've only ever had one pair of yard birds not come out really good...7+ lb roasting hens...tough old birds...needed to run low & slow, but I pushed the temps higher like I would normally run for a 4-5lb bird. This was just lack of foresight on my part.

All things considered, I think of everything I've tried smoking, birds are where I have to be on top of my game, as they aren't very forgiving. I say, when you smoked a good bird, you had a great day in the thin blue smoke!
