Only about 48 ° outside today. it's windy and chance of rain high in the next 4 hours.
Michigan St. vs Penn St. game is on hold here due to lightning.
I'm going with some of SmokinAls rib smoking ideas.
°FRESH NOT FROZEN
°LEAVING THE SKIN ON THE BACK
°LITTLE OR NO SEASONING RUB
°NO SAUCE
°NO WRAP IN FOIL
°RIBS ON AFTER FIRE STARTED NOT AFTER THE COOKER IS AT TEMP.
°HICKORY WOOD SMOKE.

I'm using the ECB with no deflector or water pan.. No foil or drip pan.
I want to get some drippings down on the charcoal and wood to see how the flavor is.
I did cheat on some of SmokinAls tips.
°I used salt and pepper.
°I used some Apple mixed with Hickory to start.
It's only about 48° so I started hot and am reducing slow to the 225-240 range. 23 minutes in and I'm going out to get temps down from 280. Ribs were ice cold to start .
3 p.m. on and that was a bit late to start.

Some bad pictures of a new place in Dearborn Michigan. It's Ford's Garage. A burger and craft beer joint built in the heart of Ford Mo Co territory.
The sun was in my face then and pics didn't look good. I just stopped in the lot for a few.

Dam! Thunder here now.. Might have to put an umbrella on the ECB

It smells much more like ribs on the BBQ when you smoke with no drip pans or anything between the coals and the meat.

The chimney starter under the bushel basket acting as a stack and is a good resting spot for the ThermoPro transmitter and basket. Air is flowing from the top dampers unobstructed.

Smells just like grilling ribs but it's slower .
Nothing between the meat and smoke.
Under the charcoal pan is what I think is about 2 inches of water that has leaked in from rain , between the ECB and the bushel basket. Probably steam keeping the ribs moist.. lol
