Well yesterday was a fine day for smoking. Not too many nice days left to use my Oklahoma Joe. This is my third smoke on the OKJ Highland. After removing the aluminum elbow mod, she performed flawlessly! I was excited about that.
The meatloaf recipe I used was nothing fancy. It was this one from a previous post: http://www.smokingmeatforums.com/t/253608/smoked-meatloaf-saturday
The meatloaf was smoked with oak and maple. I maintained a temp of 235F...it took 3.5 hours.
Once finished, I served with cauliflower gratin.
Ready for the smoker:
Here's the meatloaf at 150 internal temp. This was right before I used a bbq bourbon glaze. (Store bought Wegmans brand):

First slices, nice smoke ring:
All plated up for dinner:
