Put on a 9.9 lb pork shoulder on the Old Country Pecos this morning at 8.  Rubbed it with salt, pepper, onion powder, garlic powder, and paprika. Forgot to take pics but will when finished.  Going to be a hot day today with heat index reaching 105. Going to eat some this weekend but taking most of it to the beach for a short stay.

Pork shoulder came out as one of the best I've done.  Juicy and fall apart tender.  Kept temps between 250-300.  At 5 hrs sprayed with apple cider vinegar and wrapped in foil.  Cooked it another 5 hrs at around 250.  Took it off at 6 and let it rest for 35-40 minutes.
