And so am I. Picked up a two pack of chuckles at Costco the other day and decided to smoke one today. I've really been craving beef and briskets are still ridiculously priced right now so it seemed like a good time to try smokin a. Chuck. I rubbed it down with some SPOG I had leftover from pork chops the other day plus a little more black pepper. Put it on over oak at about three thirty running about 275-300'. It seemed to stall at about 160 about a half hour ago so I wrapped it and I'll let it ride to about two hundred.





On that same trip I also picked up a huge pork loin. I cut three pounds off for bacon and cut the rest for chops. But, I had a bit of a heel left over Soooo.....

Thanks Cranky, I was trying to figure out what to do with that lil hunk of pig when I realized I had missed lunch. Came out perfect and made a great snack for the wife and I. I did give a piece to the teenager and she loved it. She was a little pissed that she didn't get any more but my wife and I missed lunch because we at the store getting crap that she needed. Plus, it was really good and I didn't want to share.

Hey thanks man, it was a perfect relaxing day. Cold beer chillin on the back porch and tending the fire here and there. Cubed up the left overs with the drippings I didn't use for the sauce. I think I'll make some pseudo burnt ends tomorrow for lunch.
 
Man, that looks good! Had dinner a few hours ago, but now I'm hungry all over again.

Thank you Al! And thanks for the points and ride on the carousel. It was funny, while I was smoking it Bearcarver made me bust out laughing on another thread. So I had to explain the forum throughout the evening and yes that's why I take pictures of my meals or else someone will come along with an emoji saying this post is worthless without qview. Eye roll. So I was pretty smug when I told her I had made the carousel. After 12 years I think she just happy I'm not talking her ear off about BBQ

Thanks smokey the snack plate came out great. I've never liked pork loin or chops. Finally realized they were over cooked. This time I got it just right and it was great! Thank you for the points
