My very first smoke ever, MES 30 first gen. (Pix!)

Alright gents, I picked up my MES 30 on Thursday and Friday night I picked up some goods! 4lbs of buffalo wings, 8 premade bacon wrapped jalapeño poppers and a pack of brats. (I will do my own ABTs next time)

Here is a picture of the wings sitting in a rub I made (from the Masterbuilt site).

I also sprinkled a little rub on the bacon on the ABTs.

And here is my MES 30 pre-seasoning as we speak.

And the final results!!! My wife and our two friends loved it all. I must say I was impressed as well. The sauce I made for the wings was just the right amount of heat, with the right amount of sweet. Everything was so good! I can't wait to use it again.

I ran at 225 for 2.5 hours, with apple wood chips. I pulled one rack of the wings to sauce them with 35 minutes left. I did pour a little bit of apple juice in the water pan as well at the beginning.

I use my MES30 Gen 1 all the time. I like the wheeled base that you have. Never seen one like that before. When you start getting into longer cooks, check out the threads here on the AMNPS and mailbox mods.

Thanks guys!

The plan for this coming Saturday is a couple racks of baby back ribs. I plan on going "straight through", and then the next time I do ribs, I'll do the 3-2-1 method.

I also wanted to mention that I added a couple brackets to the dolly after seeing how easily the smoker moved around when I was moving it from the garage to the backyard. So far so good, they keep the smoker snug and in place!
