Brisket for breakfast

I got called back in to work last night, so I went in late this morning, but not before I made myself a good breakfast!

I diced a yellow onion, a single jalapeno, and some yellow squash from the garden and sauteed them until they were almost done.  Then I added a big handful of chopped brisket.  Stirred it all up until it was hot and then dumped it on a plate.



 Then it was time for my favorite food of all time!  Eggs!  


Talk about a killer breakfast!  I won't need to eat until supper!

I love left over brisket, so many options!
 
Oh good lord!  just the idea of the yolks running all over the brisket and vegetables..I'm in love! haha  Did something similar with my leftover the brisket the other day and will definitely be repeating it.

I should have seen this earlier this morning I would have finished my Tri-Tip that way,Hearty breakfast for sure

I'll take potatoes in place of the squash! Looks great,I have to trim the brisky to fit my WSM and usally make hash out of it for breakfast.

I've sworn off my potatoes until January. Otherwise, that's what would have been in there. That makes it almost sinful! :drool
 
Did you eat that all in one sitting???

My oh my that looks incredible --- you're not going to find that at IHOP
