Anyone help on kabob  ingredients etc... would be appreciated.  Best onions red onions?  

So what veggies do you like and what marinades do you like?  So far I'm thinking some kind of mush rooms, red onions, poblano peppers, potatoes, and tomatoes for veggies.  Meats I'm thinking some kind of chopped sirloin, and chicken... scallops if I can find some.

Everything you've mentioned thus far is good.

I prefer red onions, mushrooms are always good, squash and zucchini play well on a skewer, and a firm tomato does good too.

For a marinade, I've only made chicken skewers, so I can't speak for all, but Italian dressing as a 6-8 hour marinade was great.
 
Scallops and shrimp work well on the same skewer as they cook about the same time.

Pineapple, peaches, bell pepper, whole jalapeños, small potatoes (red, gold, new), tomatoes. Chunks of linguica or kielbasa, pork belly, Canadian bacon in chunks

Roadside chicken marinade is good on everything. Teriyaki, makes good Hawaiian style with the pineapple, bell pepper, linguica and steak.

Kalbi marinade would be good.

The sauce I used in my last hot wing thread would be fantastic on everything!

How about rotisserie burnt ends??? Come on who doesn't love that idea!

Good tips Case.   I might just do some teriyaki on part of it.   Heading to the store soon with these great ideas!

Ha!  ...and you would be correct on that assumption.  I rotisseried about 5 feet worth of kabobs and baby back ribs at the same time but I took GIF pics and can't figure out a way to post them. lol

Very cool setup though...it worked great and the food was amazing.

Thanks!, Doing what I call the "quad"  for the skewers allows at least half the spit rod for whatever else.  I think I could have fit at least 2 racks on but maybe even 3  (if they were trimmed down a tad)
