Pickled quail eggs, jalapeños, scotch eggs....

Starting tomorrow afternoon, I'll be attending the Cranky Buzzard Sausage Fest. Yes, attending since my dear friend wanted to host it at his place this year. WHOOP, that means my bride is relieved!

However, I digress, today, I asked some of the folks that will be attending what they want for a snack tomorrow night while we cut up butts and begin to grind. They replied; "surprise us and thrill us"...

Ok, challenge accepted! CrazyMoon inspired me for this one!

These snacks will require to following:

2 year old pickled quail eggs
1 year old spicy breakfast sausage
Some jalapeños
Some onion
Sriracha sauce


I mixed the sausage with some minced onion

Then covered it with Sriracha sauce, and then mixed it all up!

I rinsed off the pickled quail eggs, and then gave each of them a hula hoop of jalapeño....

Then, it was time to wrap the eggs and jalapeños in the sausage...

All wrapped up and ready for the smoker!

For smoke, I decided to use a bag of pellets someone gave to me a couple of years ago. NO CLUE how it will taste, but they did say thrill me....

The balls are now in the MES.... give me a bit, I'll post pics of the finished products and the taste test....

Now, I just need a name for these things....

CB, Those look excellent , I going to try the jalapeno hoop on my next batch ! You can call them "buzzard balls " .

Looks great!

What sort of taste did the pellet give? I'm thinking the Savory Herb might do well with smoking cheese. 

There was a hint of the herbs, but the smoke wasn't as noticeable as normal due to all of the peppers and pepper products.

Like you, I'm thinking this would be good with cheese and I'm also going to try it with some cod.

OK, I give up. Where do you buy Quail eggs? In Indiana the only time you see Quail is when they jump up and scare the heck out of you while rabbit hunting...

Not sure about Indiana, but here in Texas, I get them at the Asian markets already boiled and peeled. I just have to pickle them.
