I seasoned and tested my new OKJ last night. Went great! That thing hums along at 250 with no fighting temps like I did with the ecb. The mods worked great and I have a 10 or 15 degree difference between sides. One thing I did learn is if I put anything in the cc next to the firebox side wall it will need rotated or it will burn. I had a few abt that were singed from this.

I wish I had snapped some pics. I used apple and oak sticks. Here is what we made:

1 - Small brisket

1 - Whole chicken

18 - Atomic buffalo turds

8 - Large portobello mushroom caps stuff with a sausage mixture

On the grill with indirect heat I made a pan of bar-b-que beans.

The food disappeared and there were lots of compliments for the chef. I give the doodette most of the  credit as she is the one who prepared everything. I just tended the fire.
 
Thanks! Since the abt were a little over cooked I am going to be making them again, maybe this weekend. I need to decide what else to cook as well.
 
Sounds like a great smoke! Pics next time right! I'm guessing ribs or a but need to be on the menu maybe some scotch eggs as well! Hard boiled eggs,wrapped in sausage then bacon and rub.

 
I wish I had a doodette to prep things. My Mrs. is really good at critiquing the final product...

Yeah, makes my life a lot easier. We have a 'system'. I find and tweak the recipes and decide what to cook, I get the grill and or smoker ready, and she does the prep. Makes cooking life easier for me.

@b-one, I have had my eyes on scotch eggs for awhile now but have never made them. I think this may be the weekend. I am also thinking a stuffed loin may be in order as well since I have smoked several butts this summer on the ol ecb. So right now I am thinking stuffed loin, scotch eggs, abt, hobo potatoes and maybe corn on the cob.
