I had a couple of pieces of less than prime sirloin. What to do, what to do? I decided to put two of my favourite things together in a different way. I cut the beef into strips, marinated it and wrapped it around a walking onion. Then I smoked it. It was a total success but, for the life of me, I can't think of what to call it. Suggestions would be much appreciated.
I started by mixing 15 ml (1 tablespoon) of rye (you call it Canadian) whiskey with 75 ml (1/3 cup) barbecue sauce. I thank Lance P for the idea of putting whiskey in the sauce. It took some of the sweet out which was good as I was using the onions which have some sweet of their own.
I took two of the sirloin steaks that were cut just over 1/2 inch thick. I cut them into strips by cutting an edge to less than 1/4 inch in a spiral fashion.
I cut the strips into 4 inch strips.
I put them in the barbecue sauce and let them marinate for 4 hours, stirring them around a couple of times.
I skinned a walking onion for each strip. You could use pearl or pickling onions instead.
I wrapped a strip of beef around each onion and put a toothpick I had soaked in water through the ends of each strip and the onion.
I had my pellet smoker preheated to 375 F with competition blend pellets. I put the beef on the bottom rack so they would get some direct heat.
I smoked them for 20 minutes, turning them once. I would have liked to have cooked them less but She Who Must Be Obeyed insists on well done beef.
The Verdict
You must try these. They are simply delicious. The strongly flavoured beef goes so well with the sweetness of the onion. The outside of the onion gets a little soft but you still get a nice crisp bite from the centre.
I will be serving these often but I still need a name. HELP ME!
